Job description
To support the Food and Beverage Manager in the overall smooth & efficient running in all aspects of the Food & Beverage department. With particular responsibility for increasing profitability through the improvement of standards of customer service, and controlling staff costs. Overseeing the cellar and cash control procedures for the department.
Main Duties
- To produce a weekly rota for all front-of-house F&B staff in line with business demands.
- To liaise with the F&B Manager to ensure that this rota is within budget constraints.
- To make the rota available to all relevant staff in good time.
- To work regular shifts in the department, carrying out all duties to an exceptional standard.
- To take responsibility for the training of all front-of-house F&B staff. Ensuring that all staff are trained to a high standard, and that ongoing training is provided.
- To ensure that all staff wear the correct uniform and name badge, etc.
- To ensure high standards of hygiene and cleanliness in the F&B areas. Including taking responsibility for ensuring that all end of day cleaning procedures are adhered to.
- To oversee the maintenance of the cellar in respect of line cleaning, cellar cleaning and stock rotation.
- To monitor training and standards in the F&B areas on a regular basis.
- To ensure good communications and staff relations within the F&B department and with other departments.
- To support the F&B Manager, Golf & Events Co-ordinator & Duty Manager in the setting-up and running of functions and conferences. Communicating with the F&B Manager and/Golf & Events Manager to ensure that all requirements are met as regards table set-up and layout.
- In the absence of the F&B Manager to oversee the sales and marketing for the department.
- In the absence of the F&B Manager to oversee the finances relating to the F&B operation.
- In the absence of the F&B Manager to ensure that Health & Safety Monthly Hazard Forms are completed and that the departments health and safety folder is kept up-to-date.
- In the absence of the F&B Manager to liaise closely with the Golf & Events Co-ordinator.
- To Organise / Promote and Sell Member Social Events
- To have a full working knowledge of menus, dish content, range of beverages, standards of service required and all other matters relating to the Food & Beverage department.
- To be fully conversant with the till system.
- To liaise with the Golf & Events Co-ordinator on a daily basis
- To attend weekly Catering Meetings and pass on any new policy decisions to the team.
- To ensure that control systems for stock and cash are strictly adhered to.
- To promote up-selling techniques.
- To work in the F&B department and to make sure all standards & layouts are correct at all times.
- To assist in the ordering of food and beverages to ensure adequate stock levels on site.
- To assist the F&B Manager to carry out a monthly stock take.
- To support any new initiatives and promotions as directed.
- To carry out on the job training with staff as identified and required.
- To attend any training sessions as requested by senior management.
- To ensure all paperwork is carried out outside floor hours.
- To fulfil the role of Duty Manager* as and when required. (*Please see separate Job Description for Duty Manager role.)
- To be fully conversant with all emergency procedures for Fire and Accident and to report any accidents in the prescribed manner.
- Attend training sessions when requested.
- Comply with The Club Companys Health & Safety, Hygiene and Fire policies and implement where required.
- To promote the Clubs reputation for exceptional standards of customer care and service.
- Act as an ambassador for the Club whilst on duty.
- Attend meeting at club level to relay information and knowledge.
Job Types: Full-time, Permanent
Pay: £26,000.00-£27,000.00 per year
